A Silent Customer noted recently that they thought salt and pepper on tables was becoming a bit antiquated.
Over the last 20 years or so our palates have become used to bigger and bigger flavours and this, I feel, is not solely attributed to Rick Steins Far Eastern Odyssey series. These days there is added sugar and salt in just about every edible item that is not either slaughtered or pulled out of the ground in front of your eyes. So, with our taste buds now fully conditioned to expect umami from anything we eat and with chefs willingly meeting these demands, do we really need the addition of salt and pepper on our dining tables?
'Yes' says my other half who puts extra salt in his fish finger sandwiches! I’m not so sure, but then, maybe more is more!? What do you think?
